How spicy is it?
Scotch bonnet peppers are admittedly not for the faint of heart! If you’re concerned about the heat, you can swap them with habanero or jalapeño peppers. To really keep everything tame, remove the ribs/seeds of whatever pepper you use – that’s where most of the heat can be found.

How to Store and Reheat
Store leftover jerk chicken in an airtight container in the fridge for 2-3 days. When you’re ready to eat it, just pop it in the microwave for about 30 seconds at a time until warmed all the way through.
How to Freeze
You can freeze cooked jerk chicken for up to 3 months. Just be sure to let it fully cool to room temperature prior to storing in a freezer safe container. When you’re ready to serve it, let it slowly defrost in the fridge before reheating.

Instant Pot Jerk Chicken Recipe

Ingredients
- 2 green onions roughly chopped
- ½ onion roughly chopped
- 2 Scotch bonnet or habanero peppers* SEE NOTE
- 1 small knob fresh ginger 1 inch, peeled
- 3 garlic cloves
- 1 teaspoon dried thyme
- ½ tablespoon ground allspice
- 2 tablespoons soy sauce
- 2 tablespoons brown sugar
- ½ teaspoon salt
- ½ teaspoon ground pepper
- 1 tablespoon apple cider vinegar or any vinegar
- Juice of 1 lime
- 2 pounds boneless skinless chicken thighs
Instructions
Place all the ingredients except the chicken in a food processor. Pulse until the mixture is mostly smooth.

Place the chicken thighs in a large bowl and pour in the marinade. Toss chicken in the marinade until well-coated. Cover the bowl and place in the refrigerator to marinate at least 1 hour or up to 8 hours.

Place the chicken and marinade in the Instant Pot. Press the Manual Button and set the timer for 30 minutes on high pressure. Naturally release or manually release the pressure once cooking is complete. Remove the chicken to shred and then return to the pot to soak in the juices until ready to serve.
Notes
* Remove the ribs and seeds of the peppers to reduce the spiciness of the marinade.
Storage: Store Instant Pot jerk chicken in an airtight container in the refrigerator for 3 days, or freeze for 3 months.

How to make Instant Pot Jerk Chicken Recipe Step by Step
Make the marinade:In a food processor, add 2 roughly chopped green onions, 1/2 a roughly chopped onion, 2 Scotch bonnet peppers, 1 inch of peeled fresh ginger, 3 garlic cloves, 1 tsp dried thyme, 1/2 tbsp ground allspice, 2 tbsp soy sauce, 2 tbsp brown sugar, 1/2 tsp salt, 1/2 tsp ground pepper, 1 tbsp apple cider vinegar and the juice of one lime. Pulse until smooth. Add to a bowl with 2lbs chicken breasts, toss to coat, then marinate for 1-8 hours.
Cook the chicken: Place the chicken and marinade in the pressure cooker. Then, hit the Manual Button and set the timer for 30 minutes on high pressure. Naturally release or manually release the pressure once it’s done cooking.
Shred it: Remove the chicken from the pot and shred it with two forks. Return the shredded chicken to the Instant Pot and stir it with the juices so it stays nice and flavorful!

This was absolutely DELICIOUS! Perfect for meal prep. I must say though, I was very skeptical about the 30-minute cook time on high pressure as all other chicken break I cook is only 8-10 minutes. I ended up going with 8-10 and it was great, so I would think that 30 minutes would be wildly overcooked. Must not be the case if others have had success at that time?Reply
